Oven-Fried Chicken Breasts

Ingredients

  • 1/4 cup dry bread crumbs
  • 1 tablespoon Parmesan cheese grated
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic salt
  • 1/8 teaspoon ground red pepper
  • 1/3 cup low-fat buttermilk
  • 4 chicken breasts boneless skinless
  • cooking spray
  • 1 tablespoon butter melted

Instructions

  • Combine first five ingredients in a shallow dish.
  • Dip chicken in buttermilk and dredge in bread crumb mixture.
  • Place chicken in jelly roll pan coated with cooking spray.
  • Drizzle butter over chicken and bake at 400º for 40 minutes or until done.
