Oven-Fried Chicken Breasts

John’s favorite weeknight dinner.

Ingredients
  

  • 1/4 cup dry bread crumbs
  • 1 tablespoon Parmesan cheese grated
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic salt
  • 1/8 teaspoon ground red pepper
  • 1/3 cup low-fat buttermilk
  • 4 chicken breasts boneless skinless
  • cooking spray
  • 1 tablespoon butter melted

Instructions
 

  1. Combine first five ingredients in a shallow dish.
  2. Dip chicken in buttermilk and dredge in bread crumb mixture.
  3. Place chicken in jelly roll pan coated with cooking spray.
  4. Drizzle butter over chicken and bake at 400º for 40 minutes or until done.
