Zucchini Casserole

Good way to use up zucchini out of the garden.

Ingredients
  

  • 2 pounds zucchini seeded peeled and cut into small pieces
  • 1 small onion chopped
  • 1 carrot grated
  • 1 can cream of chicken soup
  • 1/2 pint sour cream
  • 1 package Stove Top Stuffing
  • 1/2 cup margarine
  • salt and pepper

Instructions
 

  1. Cook zucchini until tender. Drain well. Combine carrot, onion, soup, sour cream, salt and pepper. Fold in zucchini and combine stuffing mix with melted margarine. Grease a 1½ quart baking dish. Put a layer of stuffing mix in the bottom of dish and alternate layers of zucchini mixture with stuffing. End with stuffing layer on top. Bake at 375º for 25-30 minutes.
