Zucchini Casserole

Ingredients

  • 2 pounds zucchini seeded peeled and cut into small pieces
  • 1 small onion chopped
  • 1 carrot grated
  • 1 can cream of chicken soup
  • 1/2 pint sour cream
  • 1 package Stove Top Stuffing
  • 1/2 cup margarine
  • salt and pepper

Instructions

  • Cook zucchini until tender. Drain well. Combine carrot, onion, soup, sour cream, salt and pepper. Fold in zucchini and combine stuffing mix with melted margarine. Grease a 1½ quart baking dish. Put a layer of stuffing mix in the bottom of dish and alternate layers of zucchini mixture with stuffing. End with stuffing layer on top. Bake at 375º for 25-30 minutes.

Good way to use up zucchini out of the garden.
