Brown meat with onion, drain. Add the rest of the ingredients, cover and simmer 15 minutes. Stir occasionally. Serve with Cheddar cheese on top and tortilla chips on the side.

I love any recipe that is quick and has less than 10 ingredients, anything that you might have on hand. I frequently reach 4:00 pm in my day and haven’t planned dinner, so recipes like this are terrific for those of us who don’t always plan ahead!
