Swedish Potato salad

Ingredients

  • 8 pounds potatoes
  • 1 dozen hard boiled eggs
  • 1/2 bunch celery chopped fine
  • 1 large onion chopped
  • 1 pint homemade dressing
  • Miracle Whip
  • cream
  • Salt and pepper to taste
  • Sugar to taste
  • --------------------
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 3 tablespoons flour
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon paprika
  • 4 beaten egg yolks or 2 whole eggs
  • 1/2 cup vinegar
  • 1/2 cup water or half and half

Instructions

  • Cook potatoes with peelings on until done, cool, peel and dice. Mix in eggs, celery and onion. For Salad Dressing mix together all ingredients and cook in double boiler until thick. Add 2 tablespoons butter when cooked. Makes one pint. Cool and add to potatoes along with Miracle Whip and cream to make a nice consistency.
