Sunshine Salad

Ingredients

  • 1 cup boiling water
  • 1 package (3 o lemon-flavored gelatin
  • 1/2 cup cold water
  • 1 can (8 3/4 o crushed pineapple
  • 1/2 cup shredded carrots

Instructions

  • Pour boiling water over gelatin in bowl, stirring until gelatin is dissolved. Stir in cold water and pineapple (with syrup). Chill until slightly thickened but not set. Stir in carrots. Pour into 4-cup ring mold or into 9x9 pan. Chill until firm. May double recipe and pour into 13x9 pan.

Notes

This is a cool and refreshing gelatin salad.
