Pumpkin Bread

Ingredients

  • 3 cups sugar
  • 1 cup cooking oil
  • 4 eggs
  • 1 1/2 teaspoons salt
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 2 teaspoons soda
  • 1 cup walnuts chopped
  • 3 1/2 cups flour sifted before measuring
  • 2 cups canned pumpkin
  • 2/3 cup water

Instructions

  • Cream together sugar, oil, and eggs. Add salt, nutmeg, cinnamon, soda, walnuts, flour, pumpkin and water. Mix well. Pour batter into four greased loaf pans, 7x3 inches each, or use one loaf pan, 9x5 inches, and two 7x3 inch pans. Bake in 350 degree oven about one hour or until wooden pick inserted in center comes out clean. The larger loaf will take about 20 minutes longer to bake. Recipe may be cut in half. Freezes nicely.
