Mom's Potato Salad

Ingredients

  • 6 small Potatoes
  • 4 eggs hard-boiled
  • 1 stalk celery chopped
  • 1-2 sweet pickles grated
  • 1 tablespoon onion finely grated
  • mayonnaise
  • 1 squirt mustard
  • salt and freshly ground black pepper to taste

Instructions

  • Cut potatoes in uniform-sized pieces (so they cook to the same consistency.) Cook in salt water, then peel. Dice potatoes and eggs. Combine with a touch of sweet pickle juice and let stand. Add celery, pickles and onion Mix mayonnaise and squirt of mustard together, add just enough to moisten. Salt and pepper to taste.
