Frog Eye or Spezziello Salad

Ingredients

  • 1 box spezziello or acini de pepe macaroni
  • 1 3/4 cups pineapple juice
  • 3/4 cup sugar
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 3 egg yolks
  • 2 large cans pineapple chunks drained
  • 2 large cans mandarin oranges drained
  • 1 large packag miniature marshmallows
  • 1 large contai Cool WhipÆ

Instructions

  • Boil macaroni in salted water for 10 minutes. Drain and rinse. Mix and cook juice, sugar, flour, and salt until thick. Add egg yolks and cook a little longer. Combine this cooked mixture with the drained macaroni. Refrigerate overnight. Day of serving add pineapple chunks, oranges, marshmallows and Cool Whip. Refrigerate several hours before serving.
