Florentined Potatoes

Ingredients

  • 6 medium potatoes
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 tablespoons milk
  • 1/2 cup butter
  • 8 ounces sour cream with chives
  • 1/4 teaspoon dill weed
  • 10 ounces frozen chopped spinach thawed and squeezed dry
  • 3/4 cup mild Cheddar cheese grated

Instructions

  • Peel potatoes. Cook in boiling water until soft. Drain, mash, adding salt, pepper, milk and butter. When completely mashed, add sour cream, dill weed and spinach. Put in a 2 quart casserole dish. Top with grated cheese. Bake at 400ยบ for 30 minutes.

Notes

This is a good way to get your kids to eat spinach!!!
