Chili (for a large crowd)

Ingredients

  • 4 pounds ground beef
  • 2 whole onions
  • 4 large cans tomato sauce
  • 4 large cans pinto beans or 2 1/2 pounds dry - about 6 cups
  • 2 quarts water
  • 1/4 cup vinegar
  • 4 tablespoons chili powder
  • 1 tablespoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper
  • 1/2 teaspoon cumin

Instructions

  • Brown ground beef and onion, drain off fat. Add vinegar and seasonings. Add tomato sauce, beans and water. Simmer over low heat about 30 minutes. To thicken, put ¼ cup flour in jar and add one cup of water; cover and shake well. Pour into chili (through a strainer to catch any lumps) and heat through. If you use dry beans, you have to cook them separately first. Will fit into two good-sized stock pots.

Notes

This recipe is for a large crowd (serves about 32). I really do make this about once a year!! Maybe someday I’ll get a pot big enough for the whole recipe.
