Chile Relleno Casserole

Ingredients

  • 1 pound ground beef
  • 1/2 cup onion chopped
  • 1/2 teaspoon salt
  • 1 small can green chiles
  • 1 1/2 cups sharp Cheddar grated
  • 3 eggs beaten
  • 1 1/2 cups milk
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Brown beef, onion and salt, then drain. Mix green chiles and grated cheese in a medium size bowl, then stir in meat mixture. Layer mixture on bottom of a greased 8x10 pan. Combine eggs, milk, flour, salt and pepper. Pour over casserole and bake at 350º for 45-50 minutes.
