Quick Pumpkin Bread

Our family loves anything pumpkin: pie, cake, bars, dessert, or bread. Here’s a quick bread I found in the newspaper quite a while ago.

Ingredients
  

  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 teaspoons cinnamon
  • 1 1/2 cups sugar
  • 2 cups pumpkin cooked or canned
  • 4 eggs beaten
  • 1 cup vegetable oil
  • 1/2 cup nuts optional

Instructions
 

  1. Preheat oven to 350º. Combine dry ingredients. Mix remaining ingredients together and stir into dry mixture. Bake in 2 greased loaf pans for 1 hour.
