Frog Eye or Spezziello Salad

Ingredients
  

  • 1 box spezziello or acini de pepe macaroni
  • 1 3/4 cups pineapple juice
  • 3/4 cup sugar
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 3 egg yolks
  • 2 large cans pineapple chunks drained
  • 2 large cans mandarin oranges drained
  • 1 large packag miniature marshmallows
  • 1 large contai Cool WhipÆ

Instructions
 

  1. Boil macaroni in salted water for 10 minutes. Drain and rinse. Mix and cook juice, sugar, flour, and salt until thick. Add egg yolks and cook a little longer. Combine this cooked mixture with the drained macaroni. Refrigerate overnight. Day of serving add pineapple chunks, oranges, marshmallows and Cool Whip. Refrigerate several hours before serving.
