Florentined Potatoes

This is a good way to get your kids to eat spinach!!!

Ingredients
  

  • 6 medium potatoes
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 tablespoons milk
  • 1/2 cup butter
  • 8 ounces sour cream with chives
  • 1/4 teaspoon dill weed
  • 10 ounces frozen chopped spinach thawed and squeezed dry
  • 3/4 cup mild Cheddar cheese grated

Instructions
 

  1. Peel potatoes. Cook in boiling water until soft. Drain, mash, adding salt, pepper, milk and butter. When completely mashed, add sour cream, dill weed and spinach. Put in a 2 quart casserole dish. Top with grated cheese. Bake at 400ยบ for 30 minutes.
