Cucumber-Vinegar Salad

A standard at our Swedish Smorgasbord

Ingredients
  

  • 3 medium cucumbers
  • 1/4 medium onion sliced paper thin
  • 1/2 cup white vinegar
  • 1/4 cup water
  • 3 tablespoons sugar
  • pepper to taste
  • 1/2 teaspoon salt

Instructions
 

  1. Peel cucumbers and slice thin. Add sliced onion and toss. Stir together vinegar, water, sugar, salt and pepper. Pour over slices. Cover and refrigerate at least three hours-eight hours is even better.
