Chili (for a large crowd)

This recipe is for a large crowd (serves about 32). I really do make this about once a year!! Maybe someday I’ll get a pot big enough for the whole recipe.

Ingredients
  

  • 4 pounds ground beef
  • 2 whole onions
  • 4 large cans tomato sauce
  • 4 large cans pinto beans or 2 1/2 pounds dry – about 6 cups
  • 2 quarts water
  • 1/4 cup vinegar
  • 4 tablespoons chili powder
  • 1 tablespoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon pepper
  • 1/2 teaspoon cumin

Instructions
 

  1. Brown ground beef and onion, drain off fat. Add vinegar and seasonings. Add tomato sauce, beans and water. Simmer over low heat about 30 minutes. To thicken, put ¼ cup flour in jar and add one cup of water; cover and shake well. Pour into chili (through a strainer to catch any lumps) and heat through. If you use dry beans, you have to cook them separately first. Will fit into two good-sized stock pots.
