Tortilla Soup

This is “Tortilla Soup a la Linda.” She told me how to make this simple, but delicious soup. It’s fast and easy and great on a rainy or snowy day.

Ingredients
  

  • 1 1/2 pounds ground beef
  • 1/2 yellow onion chopped
  • 1 can beef broth or boullion
  • 1 can tomato soup
  • 1 can tomatoes
  • 2 cans water
  • 4 ounces chopped green chiles
  • 1 clove garlic pressed
  • salt and pepper to taste
  • corn tortilla strips fried crisp
  • grated Cheddar cheese

Instructions
 

  1. Brown ground beef, onion and garlic. Add soups, tomatoes, water, green chile and salt and pepper. Simmer for 30 minutes. Serve with fried tortilla strips and grated Cheddar cheese.
