Swedish Almond Rusks

Diane: I can remember how lovingly Grandma used to slice these rusks, and how carefully she laid them on the pan to dry.

Ingredients
  

  • 1 cup sugar
  • 1 cup butter
  • 2 slightly beaten eggs
  • 3 tablespoons cream
  • 1/2 cup chopped almonds
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1/8 teaspoon soda
  • 1/8 teaspoon salt

Instructions
 

  1. Cream butter and sugar. Add eggs, cream, and almonds. Sift together flour, baking powder, soda and salt. Mx well. Roll into 4 long narrow loaves. Bake at 350º for 20 minutes. Slice and dry quickly in 250º oven.
