Squash Bread

Ingredients
  

  • 1 cup sugar
  • 1/2 cup brown sugar packed
  • 1 cup squash cooked and mashed
  • 1/2 cup oil
  • 2 eggs
  • 1/4 cup water
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/2 teaspoon cinnamon
  • 1/2 cup crushed pineapple
  • 1/2 cup walnuts

Instructions
 

  1. In mixing bowl, combine sugar, brown sugar, cooked squash, oil, and eggs. Beat until blended. Stir in water. Sift flour, baking soda, salt, nutmeg, cinnamon and ginger. Add to squash mixture and mix well. Stir in pineapple and nuts. Turn into a loaf pan. Bake at 350ยบ for 65-70 minutes or until done. Remove from pan, cool on rack.
