Sopaipillas
(Becky) I submitted this recipe for Shawn. She sent it to us. It is one of the best Sopaipilla recipes I’ve tried.

- Dissolve yeast in warm water, blend in remaining ingredients except 3 cups of flour. Let rise 1 hour. Add remaining ingredients (flour). Knead into soft dough, cover and let rise until doubled in size. Punch down. Roll out to 1/8 inch thick, cut into squares or triangles. Fry in hot grease until browned lightly. Serve with butter and honey. You may store dough in a plastice bag in refrigerator a few days. Makes about 3 dozen.
