Senate Bean Soup

I got this recipe from the newspaper. The U.S. Senate cafeteria seems to be famous for this soup.

Ingredients
  

  • 1 pound Navy beans
  • 1 1/2 pounds smoked ham hocks
  • 1 bay leaf
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon thyme
  • 2 cups onion chopped
  • 2 cloves garlic
  • 1 medium white potato diced
  • 2 medium carrots chopped
  • 2 stalks celery chopped

Instructions
 

  1. Soak bean overnight. drain and rinse. Put beans in pot and add 10 cups of water, ham and bay leaf. Boil. Reduce heat to low and cook covered until beans are tender (1½ – 2 hours). Remove ham and set aside. Cut meat from bone and dice. Add seasonings and vegetables. Cook at a gentle simmer, uncovered for 40 minutes. Add ham.
