Seafood Kabobs

Ingredients
  

  • 1 pound scallops
  • shrimp
  • 13 1/2 ounce can pineapple chunks
  • 4 ounces button mushrooms
  • 1 green pepper cut into 1 inch squares
  • cherry tomatoes
  • pearl onions optional
  • 1/4 cup oil
  • 1/4 cup lemon juice
  • 1/4 cup soy sauce
  • 1/4 cup chopped parsley
  • 1/2 teaspoon salt
  • dash pepper
  • 12 strips bacon

Instructions
 

  1. Rinse scallops with cold water. Place pineapple, mushrooms, green peppers, tomatoes, onions, shrimp and scallops in bowl. Mix oil, lemon juice, parsley, soy sauce, salt and pepper. Pour over scallop mixture and let stand for 30 minutes stirring occasionally. Fry bacon until cooked but not crisp. Cut in half. using long skewers, alternate pieces with bacon loops until skewers are filled. Cook 4 inches from moderately hot coals for 5 minutes. Baste with sauce, turn and cook 5-7 minutes more or until bacon is crisp.
