Pizza Dough

I like to make pizza with lots of vegetables. The kids like to help because they can pick the toppings they want. And we usually have leftovers for lunch the next day.

Ingredients
  

  • 1 cup warm water
  • 1 package active dry yeast
  • 2 1/2 cups all-purpose flour
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt

Instructions
 

  1. Combine the water, yeast, and 1½ cups of the flour in a large bowl. Mix Well. Add the oil, salt, and remaining flour. Knead (or have Kitchen Aid mixer knead it for you). Transfer the dough to a lightly oiled bowl. Cover the bowl with oiled plastic wrap and a towel, and let the dough rise until it has doubled in size, about 1 hour. When the dough has risen, place it on a lightly floured surface, roll into two balls. Cover them as before and let rest 15 to 20 minutes. Roll into two 12-inch pizzas.
Serving Ideas:
    Hawaiian Pizza:
    1. 1/2 pizza dough recipe, pizza sauce (we like Cantadina), Canadian bacon, green pepper, chopped; canned pineapple tidbits, red onion, Mozzarella and Parmesan cheese.
    Pesto Pizza:
    1. 1/2 of pizza dough recipe, store bought pesto sauce, sun-dried tomatoes (oil-packed), mushrooms, red onion, Mozzarella and Parmesan cheese.
    2. We also like to use an “olive oil sauce” where you drizzle the crust with olive oil, fresh minced garlic, salt and freshly ground pepper before putting the toppings on. Another one of my favorite pizza toppings is fresh spinach sliced into thin strips.
