Palmer House Carrot Cake

I receive a lot of compliments on this cake.

Ingredients
  

  • 2 cups flour
  • 2 cups sugar
  • 1 tablespoon cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • dash allspice
  • 4 eggs
  • 1 cup cooking oil
  • 4 cups carrots finely shredded
Frosting:
  • 8 ounces cream cheese softened
  • 1/3 cup butter softened
  • 1 teaspoon vanilla
  • 3 cups powdered sugar or until right consistency

Instructions
 

  1. Grease and flour a 9×13 pan. Stir together flour, sugar, cinnamon, baking soda, salt and allspice. Beat eggs until light and frothy. Beat on medium speed while adding oil. At a low speed, beat in the flour mixture just until smooth. By hand, stir in the carrots. Pour batter into pan. Bake at 350ยบ for 35-40 minutes or until done. Cool.
  2. Beat the cream cheese, butter and vanilla for the frosting until light and fluffy. Gradually beat in enough powdered sugar to make a spreadable frosting (about 3 cups.)
