Palmer House Carrot Cake

- Grease and flour a 9×13 pan. Stir together flour, sugar, cinnamon, baking soda, salt and allspice. Beat eggs until light and frothy. Beat on medium speed while adding oil. At a low speed, beat in the flour mixture just until smooth. By hand, stir in the carrots. Pour batter into pan. Bake at 350ยบ for 35-40 minutes or until done. Cool.
- Beat the cream cheese, butter and vanilla for the frosting until light and fluffy. Gradually beat in enough powdered sugar to make a spreadable frosting (about 3 cups.)
