Mostaciolli Salad

I got this one from Mary Maxson. A great salad to take to a picnic because it doesn’t spoil quickly in the heat.

Ingredients
  

  • 20 ounce package Mostaciolli noodles
  • 1 onion thinly sliced cut rings in half
  • 1-2 cucumbers thinly sliced
  • oil
  • 1/2 cup sugar
  • 3/4 cup cider vinegar
  • 1 cup water
  • 1 teaspoon salt
  • 1 tablespoon coarse ground pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon mustard
  • 1 teaspoon dry parsley flakes

Instructions
 

  1. Cook 20-ounce package of Mostaciolli noodles for 12 minutes (don’t overcook). After draining, coat with 1 tablespoon oil. Add one onion, thinly sliced and one or two thinly sliced cucumbers. Mix the rest of the ingredients as a dressing and pour over the noodles.
