Miller’s Cinnamon Rolls
Jane Otto gave my mom this recipe. It is the original recipe from Miller’s department store in Lincoln. Now I make them once a year at Christmas and freeze most of them so we have yummy fresh cinnamon rolls all through the holidays.

- Mix 6 to 7 cups flour, sugar, salt, yeast, dry milk and water. Add 4 eggs and mix. Add remaining flour until dough is not sticky. Knead. Let rise in a warm place until double in a greased bowl covered with greased plastic wrap and a towel (about 1 hour). Mix together 1 1/2 cups sugar and cinnamon. Punch dough down and divide into 8 portions. Using a rolling pin, shape each portion into a rectangle about 4” x 16”. Spread rectangle-shaped dough with butter and sprinkle with sugar and cinnamon mixture. Roll each rectangle up so it becomes a log 16” long. Slice the log into 16 pieces, dip each in melted butter, and roll in cinnamon and sugar mixture (it’s possible that you will need more butter, sugar, and cinnamon). Prepare pans with canola oil spray. Place rolls in pans touching each other. Bake 20 to 25 minutes at 350º. Cool. Drizzle with powdered sugar icing.
- Powdered Sugar Icing: mix 2 cups powdered sugar, 1/2 teaspoon vanilla and 2 tablespoons milk until smooth.
