Mexican Lasagna

Ingredients
  

  • 1 1/2 pounds hamburger
  • 1 1/2 teaspoons cumin
  • 1 tablespoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon red pepper
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 16- ounce can whole tomatoes chopped
  • 10-12 corn tortillas chopped
  • 2 cups cottage cheese
  • 1 cup Monterey Jack cheese with peppers grated
  • 1 egg
  • 1/2 cup Cheddar cheese grated
  • 2 cups lettuce shredded
  • 1/2 cup tomatoes chopped
  • 3 green onions chopped
  • 1/4 cup olives chopped

Instructions
 

  1. Brown hamburger; drain. Add seasonings and tomatoes. Heat. Cover bottom of 13×9 pan with tortillas. Pour some of beef mixture over tortillas. Add another layer of tortillas. Mix Monterey Jack cheese, cottage cheese, and egg in small bowl. Pour over tortillas. Bake at 350º for 30 minutes. Remove from oven, top with lettuce, tomato, onion and olives. Serve with salsa.
