Leprechaun Burgers

These are so cute! We’ve made them for years for the kids to take to school for St. Patrick’s Day and we also have them for dessert after our traditional Corned Beef and Cabbage dinner.

Ingredients
  

  • 1 box Vanilla Wafers cookies
  • 1 package York peppermint patties miniature
  • shredded coconut dyed green
  • hot tamales sliced
  • red frosting in a tube
  • yellow frosting in a tube
  • sesame seeds

Instructions
 

  1. Brush top of half the vanilla wafers lightly with water and sprinkle with a few sesame seeds. Set aside. These will be the top “bun” of your “hamburger.” Place remaining vanilla wafers (bottom part of bun) in paper cupcake cups. Unwrap the peppermint patties (hamburger patties) and place one on each of the vanilla wafers (bottom part of bun). Sprinkle the green coconut (lettuce) on top of the patties and set a couple of slices of hot tamales((sliced tomatoes) on top of the lettuce. Squeeze a little red frosting (ketchup) and yellow frosting (mustard) on top of this and top off with the vanilla wafers that have sesame seeds on top. Voila! Leprechaun Burgers!
