Lemon Cake

Ingredients
  

Cake:
  • 2 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/2 cup shortening
  • 1/2 teaspoon salt
  • 1 teaspoon lemon juice
  • 1 cup sugar
  • 2 eggs
  • 3/4 cup water
Filling:
  • 3/4 cup sugar
  • 3 tablespoons flour
  • salt
  • 1/4 cup lemon juice
  • 1/2 cup water
  • 3 egg yolks
  • 2 tablespoons butter
Frosting:
  • 2 egg whites
  • 1 1/2 cups sugar
  • 5 tablespoons cold water
  • 1 teaspoon vanilla
  • 12 marshmallows

Instructions
 

  1. Bake cake in 2 layer pans. Put filling between the two layers. Cook frosting in a double boiler.
