Herman and Thelma Pearson’s Oyster Stew

This was always served on Christmas Eve. Thelma is Vivian’s sister (and Betty’s mom).

Ingredients
  

  • 1 1/2 pints fresh oysters
  • 1 gallon whole milk
  • 1/2 pound butter 2 squares

Instructions
 

  1. Heat the milk in a large kettle. Simmer butter, oysters and the liquor they come in until the oysters open. Drain off the liquor and add it to the milk as it simmers. Add the oysters the last 15 minutes.
