Ham and Green Noodle Bake

Great for leftover ham!
We got this recipe from Linda many years ago. It became a Sadler family favorite. Andrew’s long time friend, Mikey, said he could eat the whole casserole.

Ingredients
  

  • 1 medium onion chopped
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon dry mustard
  • 1 3/4 cups milk
  • 3/4 lbs. ham cut up 2 cups
  • 1/2 cup shredded Swiss cheese
  • 3 cups uncooked spinach noodles
  • 2 tablespoons Parmesan cheese grated

Instructions
 

  1. Cook noodles and drain. Set aside. Saute onions in butter until tender. Blend in flour, salt, pepper, and mustard. Cook over low heat until smooth and bubbly. Remove from heat and stir in milk. Heat to boiling. Stirring, boil 1 minute. Stir in Swiss cheese and ham. Add noodles. Turn into a 1 1/2 quart ungreased casserole. Bake uncovered 20 minutes at 375 degrees.
