Green Chile Stew

I got this recipe from my mother-in-law. Sautéing the tenderloin for the full 30-45 minutes is what makes the broth so rich and tasty.

Ingredients
  

  • 1 pound pork tenderloin cubed
  • 1 small onion chopped
  • 2 cloves garlic pressed
  • 1 large potato diced
  • 1/2 lb. green chile chopped
  • 14 ounces tomatoes chopped
  • 3 cans chicken broth

Instructions
 

  1. Brown pork in a small amount of olive oil. Add onion and garlic and sauté over low heat 30-45 minutes. Add chicken broth and simmer 2 hours.
  2. Thirty minutes before serving add potato, tomatoes, and green chile. Continue to simmer until potatoes are tender.
