Green Bean Nicoise

This is a delicious summer side-dish. It goes great with grilled anything and is a nice change from ordinary veggies.

Ingredients
  

  • 1 pound green beans trimmed
  • 2/3 cup plum tomato chopped
  • 1/4 cup shallots minced
  • 2 tablespoons water
  • 1 tablespoon kalamata olives chopped
  • 1 tablespoon red wine vinegar
  • 1 1/2 teaspoons olive oil
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt

Instructions
 

  1. Place beans into a large saucepan of boiling water; cook 5 minutes. Drain and plunge beans into ice water; drain. Combine tomato and remaining ingredients; pour the mixture over beans, and toss to coat.
