Farmer’s Casserole

Ingredients
  

  • 3 cups hash browns frozen shredded
  • 3/4 cup (3 ounce Monterey jack cheese with jalapeno peppers shredded
  • 1 cup cooked ham or Canadian bacon diced
  • 1/4 cup green onion sliced
  • 4 eggs or 1 cup frozen egg product beaten
  • 1 -12 ounce can 1 1/2 cups evaporated milk (or evaporate
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt

Instructions
 

  1. Grease a 2 quart baking dish. Arrange potatoes evenly in the bottom of the dish. Sprinkle with cheese, ham, and green onion. In medium mixing bowl combine eggs, milk, pepper, and salt. Pour egg mixture over potato mixture in dish. Bake uncovered, in a 350 degree oven for 40 to 45 minutes. Let stand 5 minutes before serving. (The dish may be covered and refrigerated before baking for several hours or overnight. Bake for 55-60 minutes.)
