
Eggs ala Golden Rod
This recipe is so special that we save it for Christmas and Easter but John Dominic tries to request it for his birthday. Mom has the amounts quadrupled in her cookbook. Part of our Easter tradition is the “Egg Game”. This is where everyone picks their own hard-boiled egg. Holding it in your hand, the challenger taps the tip of their egg to yours. The one who has the uncracked egg after challenging one another wins!! Then it’s a group effort to peel the eggs.

- Melt butter over low heat in a heavy saucepan. Blend in flour, seasonings. Cook over low heat, stirring until mixture is smooth and bubbly (about 5 minutes to get rid of “raw” taste.) Remove from heat. Stir in milk. Bring to a boil, stirring constantly. Boil until mixture thickens.
- Peel eggs and separate whites from yolks. Break up whites and add to white sauce. Grate egg yolks.
- Broil english muffin halves until toasted.
- Top each muffin half with some of the white sauce. Sprinkle with grated egg yolks.
