In a shallow bowl mix cinnamon and sugar. Brush tortillas on both sides with water, cut into 6 wedges. Dip each wedge into cinnamon sugar. Place on foil lined baking sheet in single layer. Bake at 500 degrees until crisp and golden (about 4 minutes). Let cool. While tortillas are baking, mix cream cheese, orange juice, and honey until smooth. Place in small serving bowl. Combine fruit in a small serving bowl. To serve, mound tortilla wedges on a platter. Offer sauce and fruit salsa to spoon onto wedges. Makes 10-12 servings.
