Chocolate Mint Brownies

In keeping with the “green” for St. Patrick’s Day, these brownies have a green mint layer.

Ingredients
  

  • 2 squares unsweetened baking chocolate
  • 1/4 cup margarine
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon peppermint extract
Peppermint Frosting:
  • 2 tablespoons margarine
  • 1 cup powdered sugar
  • 1/2 teaspoon peppermint extract
  • 2 drops green food color
  • 1 teaspoon water
Chocolate Frosting:
  • 1 -6 ounce pac semisweet chocolate chips
  • 2 tablespoons margarine

Instructions
 

  1. Preheat oven to 350 degrees. Grease an 8×8 baking dish. Melt chocolate. Cool. Combine margarine, sugar, eggs, flour, salt, and peppermint extract. Add cooled chocolate. Spread in pan. Bake for 25 minutes. Cool completely. For peppermint frosting, mix margarine, powdered sugar, peppermint extract, food color and water. Spread over cooled brownies. Refrigerate. For chocolate frosting, melt margarine and chocolate chips together. Cool. Spread over mint frosting. Refrigerate 10 minutes.
