Chocolate Chip Cake

Sometimes it’s nice to have a cake without a gooey frosting.

Ingredients
  

  • 1 1/2 cups boiling water
  • 1 cup quick oatmeal
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1/2 cup shortening
  • 2 eggs
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon cocoa
  • 1 cup chocolate chips
  • 1/2 cup walnuts chopped

Instructions
 

  1. In a small bowl, pour boiling water over oatmeal and let stand 10 minutes. Cream sugars and shortening in separate bowl. Add eggs and beat until smooth. Add oatmeal and mix well. Add flour, soda, salt and cocoa. Beat one minute. Stir in half of the chocolate chips. Pour into greased and floured 8×12 pan (can also use 9×13). Sprinkle nuts and remaining chocolate chips onvtop. Bake at 350ยบ for 35-40 minutes.
