Chicken Scampi

This goes together quickly and makes a tasty dinner. It’s one of my favorites!

Ingredients
  

  • 1 lb. chicken breasts boneless skinless, cut into 1-inch pieces
  • 1/4 cup egg substitute
  • 1/3 cup Italian-seasoned bread crumbs
  • cooking spray
  • 2 tablespoons butter or margarine
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 2/3 cup dry white wine
  • 1 1/2 tablespoons fresh parsley chopped or 1/2 teaspoon dried
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon salt
  • 6 ounces linguine uncooked about 3 cups cooked
  • 1/4 cup Parmesan cheese freshly grated

Instructions
 

  1. Dip chicken in egg substitute; dredge in breadcrumbs. Place a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add chicken, and saute for 6 minutes or until browned. Remove chicken from pan. Melt butter in pan over medium-high heat. Add garlic, and saute 1 minute. Add broth and the next 4 ingredients (broth through salt), and bring to a boil. Add the chicken; reduce heat, and simmer for 20 minutes. Place 3/4 cup pasta on each of 4 plates; top each serving with 3/4 cup chicken mixture, and sprinkle with 1 tablespoon cheese. (I usually substitute 2/3 cup chicken broth for the white wine–I think it tastes just as good.)
