Aunt Esther’s Fresh Peach Pie

We have a peach tree in our back yard and this is my favorite recipe for using the peaches. It is delicious! I use “Perfect Piecrust.”

Ingredients
  

  • 1 quart sliced peaches
  • 1/2 cup water
  • 3 tablespoons cornstarch
  • 1 cup sugar
  • pinch salt
  • 1 tablespoon lemon juice
  • 1 tablespoon butter

Instructions
 

  1. Cut up 1 cup peaches. Add water, sugar and cornstarch and cook 4 minutes. Cook until clear and thick. Add lemon juice, butter and salt. Cool. Arrange remaining fruit in baked, cool pie shell. Pour glazed fruit over sliced peaches. Chill. Top with whipped cream and a few peach slices.
