Biscochitos ( Anise Seed Cookies )
These traditional New Mexican holiday cookies melt in your mouth!
The fleur-de-lis shape is traditional for these cookies. The healthier version using shortening is very good but authentic Bizcochitos contain lard.

- Cream softened lard, sugar, and anise seed in a large mixing bowl. Add eggs and beat well. Combine flour, baking powder and salt in a large mixing bowl. Alternately add flour and brandy or wine to creamed mixture until stiff dough has been formed. Knead dough slightly and pat or roll to a 1/4 inch thickness. Cut dough into desired shapes. Combine sugar and cinnamon in small mixing bowl. Dust the top of each cookie with a small amount of sugar mixture. Bake in a 350 degree oven for 10 minutes or until cookies are lightly browned. Makes 5 dozen.
