Creamy Potato Soup (2)

Ingredients
  

  • 4 slices bacon cut up
  • 3 medium (3 cups potatoes peeled and chopped
  • 1 large (1 cup onion chopped
  • 1 medium (1/2 carrot chopped
  • 1 stalk (1/2 c celery chopped
  • 4 cups milk
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 cup sour cream
  • 2 tablespoons flour
  • 2 teaspoons paprika

Instructions
 

  1. Cook bacon till crisp–drain. Set aside. Add potatoes, onion, carrot, and celery to drippings. Cook over low heat until tender, about 20 minutes. (I add water). Stir in milk, and salt and pepper. Bring to a boil. Stir together sour cream, flour and paprika. Stir 1 cup of hot mixture into sour cream mixture. Return to remaining hot mixture. Stir until mixture bubbles. Top with bacon pieces. Makes 6-8 servings.
