Buttermilk Oatmeal Muffins

Great muffin recipe from my mother-in-law, Helen Freeman.

Ingredients
  

  • 1 cup quick cooking oats
  • 1 cup buttermilk
  • 1 egg
  • 1/2 cup packed brown sugar
  • 1 cup flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup vegetable oil

Instructions
 

  1. In a bowl soak oats in buttermilk for 15 minutes. Stir in egg, sugar, and oil. Combine flour, baking powder, soda, and salt. Stir into oat mixture until moist. Spray 8 muffin cups with Pam. Spoon into muffin cups. Will be nearly full. Bake at 400 degrees for 16-18 minutes or until slightly brown. Cool 5 minutes. Remove from pan.
